First, there was pandemic sourdough, now y’all need to get hip to making your own popcorn on the stove. See ya later microwave insta-pop or whatever it's called, we're not raccoons and we don't eat that garbage. Also because it’s Netflix season, it’s the perfect time to perfect your popcorn making skills so you can one day share it with all the friends you can't have over right now. My toppings of choice are parmesan/pecorino cheese, black pepper, smoked salt, nutritional yeast, and olive oil.
TAKES: 10 min
MAKES: Enough popcorn for you while you sit at home and stay safe
INGREDIENTS
Enough vegetable or olive oil to cover the bottom of a heavy bottom pan
Enough popcorn kernels to make one layer on the bottom of your pan
A handful of freshly grated parmesan or pecorino cheese (I use a Microplane)
Dash of freshly ground white or black pepper
Dash of smoked salt
1 tbsp of good olive oil
A couple of shakes of nutritional yeast
*if you really want to make the popcorn sing, add a couple of shakes of furikake to it and you won’t be disappointed.
INSTRUCTIONS
Pour your oil into your heavy-bottomed pot until it covers the bottom of the pot.
Add one layer of kernels and pop on the lid.
Slowly heat up the oil and kernels on medium heat.
Once you hear the first pop, gently shake the pot with one hand while the other hand holds the lid down. Repeat the shaky shaky every 10-15 seconds.
Once all the popcorn has popped. Turn off the heat and let it rest for a minute in case there are some latent poppers.
In a large bowl add all the topping ingredients, pour in the popcorn. Toss those puppies, crack a drink and watch your favourite Dame Maggie Smith movie.
